In 1992, Norma Bitar, with the help of her husband George, opened a small sandwich shop on Kings Highway in Cherry Hill so that she could be close to her three children (Elias, Mariette, and Ziad) who were all students in the
Cherry Hill school district.
In 1996, Norma took a giant leap and opened a full-fledged restaurant on Route 70 in the Barclay Farms Shopping Center. In 2005, with the help of her three children (no longer kids), the Bitars expanded their business with the opening of CousCous Moroccan Cuisine & Hookah Lounge and Norma's To-Go:
an Eastern Mediterranean take-out and grocery.
